Maxican Paratha

Maxican Paratha

Ingredients (for 6-7 parathas)
  • 1 ½ cup wheat flour        
  • ½ Rajma (soaked overnight)     
  • 4 Olives   (optional)     
  • ½ cup Grated Cheese          
  • ¼ tsp Cumin seeds        
  • 1 Green chili (finely chopped)     
  • ½ tsp Garlic paste     
  • 1 medium size onion (finely chopped)
  • 1 medium tomato (finely chopped)
  • Salt as per taste    
  • ½ tsp red chilli powder  
  • ¼  tsp oregano flakes   
  • ¼ cup Oil 
Method (How to make maxican paratha at home)
  • Pressure cook soaked rajma till soft and mashy. Drain the water and keep it aside.
  • In a wide bowl add whole wheat flour and salt add water and knead a pliable dough. Apply few drops of oil and cover it and keep aside.
  • Remove the tomato seeds and chop them finely.
  • Heat 2 tsp oil in pan add garlic paste and sauté for few seconds, add chopped onions and green chilli saute till onion turn golden brown.
  • Add chopped olives and sauté, add in the chopped tomatoes and cook for few minutes.
  • Add red chilli powder, oregano and cooked beans and chopped olive.
  • Add boiled beans, salt, red chilli powder, oregano and mash well with potato masher.
  • Cook it well till the moisture in the mixture evaporates.
  • Allow this to completely cool down.
  • Add grated cheese into the mixture.
  • Mix well and make equal 6-7 parts.
  • Make the dough also into equal 6-7 slightly big lemon sized balls. 
  • Dust some dry flour and gently roll this into thick medium sized paratha.
  • Heat a griddle and place the rolled parathas on heated griddle.
  • Cook from one side and flip to other side place one part of filling and roll the paratha as roll,  and apply some oil and cook till crispy and light brown. Cover the roll with paper napkin.
  • Repeat the same for the rest of the dough and filling.
  • Serve hot with tomato salsa or avocado dip.

Spicy Potato Cutlets

Spicy Potato Cutlets


Ingredients (12-15 cutlets)
  • 4 medium boiled Potatoes
  • 1 tsp ginger garlic paste
  • 1 green chilli (finely chopped)
  • 1 large Onion (finely chopped)
  • ½ tsp Red chilli powder
  • ½ tsp fennel seeds powder
  • ½ tsp Garam masala
  • 1 tbsp Sesame seeds (slightly roasted)
  • 1 tbsp Corn flour
  • 2 tbsp Bread crumbs
  • Oil for frying
  • Salt to taste
  • 1 tbsp coriander leaves (chopped)
Method (How to make spicy potato cutlets at home)
  • Mashed the boiled potatoes and keep aside.
  • Heat oil in a wok add ginger garlic paste and sauté few seconds, add chopped onions and green chilli and sauté till light brown.
  • Add all dry spices(chilli powder, garam masala, and fennel seeds powder) and mix well.
  • Add salt and sesame seeds and give a nice stir.
  • Switch off the flame.
  • Mix this mixture into the mashed potato, add coriander leaves  and mix well.
  • Make 10-12 part with the mixture and shape them as cutlets shape of your choice.
  • Add 2 tbsp water in the corn flour and make thin batter.
  • Place bread crumps in a plate.
  • Dip one cutlet in corn flour mixture and then roll over the bread crumps and keep aside.
  • Heat oil in a wok and fry all cutlets till brown and crispy.

Whole Wheat Pizza Paratha


Ingredients (for 2 servings)
for outer part
  • 1 cup whole wheat flour
  • ¼ tsp salt
  • ½ tsp sugar
  • ½ tsp baking powder
  • ¼ cup warm water
For stuffing
  • 2 tbsp pizza sauce or tomato sauce
  • Salt as per taste
  • ½ tsp chili flakes
  • 1tsp dry oregano
  • ½ cup capsicum finely chopped
  • ½ cup paneer (grated)
  •  ½ cup mushrooms finely chopped
  • ¼ cup onion finely chopped, adjust to taste
  • 1 cup mozzarella cheese grated
Other ingredients
  • ¼ cup wheat flour for rolling paratha
  • 2 tbsp oil for roasting paratha
Method (How to make pizza paratha with wheat flour)
  • Mix the flour, sugar, salt, baking powder, and oil, add the water as needed to make soft and pliable dough. Cover the dough and set aside for about one hour.
  • Use one cotton cloth to squeeze the chopped capsicum and mushroom to remove the extra water.
  • In a bowl capsicum, mushrooms, paneer, salt, chili flakes, oregano and cheese, mix it well.
  • Again knead the dough and divide in four equal parts.
  • Roll two part of the dough into about six-inch diameter, use dry flour as needed to roll.
  • Apply pizza sauce over the roti and place half a cup of filling in the center. Cover with the other rolled roti.
  • Heat the tawa on medium heat, put some oil on the tawa  generously, and place the paratha on the skillet. Cook the paratha for 2-3 minutes and flip the paratha. Paratha should be golden brown. It is important to cook paratha on low heat.
  • Apply some oil on both side of the paratha and flip it again in about 2 minutes. Paratha should be golden brown both sides for crispness. Paratha should take about five minutes to cook nicely.
  • Pizza paratha is ready, serve hot with tomato sauce.

Ingredients
  • 1 ½ cup all purpose flour (Maida)
  • 1 cup sugar
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ strawberry essence
  • ¼ cup water
  • ½ cup oil
  • ¾ cup butter milk
  • 2/3 cup strawberry crush or (1/2 cup chopped fresh strawberry)
Method(how to make strawberry cup cakes at home)
  • Add sugar, oil and butter milk in a mixing bowl and mix well, add essence and water and keep it aside to dissolve the sugar.
  • Pre heat oven to 180 degree C
  • Mix  maida, baking powder, baking soda, and salt and sift to remove all lumps.
  • Mix the dry ingredient into the wet ingredients and mix well, do not over mix the batter.
  • Add strawberry crush or chopped strawberry and mix well.
  • Place the cup cake liner into the muffin trey.
  • Spoon the batter to the cupcake liners and bake them in a preheated oven for 15-18 minutes or till toothpick inserted comes out clean.
(you can use  any fruit of your choice to make fruits cupcake like pineapple, apples, kiwi or even nutella)

Bombay Halwa – Karanchi Halwa
Ingredients
  • 1 cup corn flour
  • 2 cup sugar
  • ¼ cup ghee
  • 1 cup chopped dry fruits (cashew, almonds, pistachios)
  • Pinch of red colour
  • ¼ tsp citric acid (lemon salt)
  • ½ tsp cardamom powder
  • 3 cup water
Method  (How to make bombay karachi halwa at home easy method)
  • Take sugar in a non stick par or any heavy bottom pan and add sugar and 2 cups of water. Mix well and heat till the sugar is melted.
  • While sugar is melting, take cornflour in a bowl and add in 1 cup of water and mix well so no lumps are formed.
  • When sugar melt completely in pan, switch stove to low flame and pour the corn flour mix in and mix well.
  • And stirring continuously from the bottom of the pan on low flame till it is thick, glossy and jelly like. (it will take around 15-20 minutes)
  • Now add citric acid and 2 tbsp of ghee and keep mixing till mixture absorb all the ghee.
  • Add food colour and more ghee and mix well. Use all the ghee in 3-4 shifts.
  • Now it will get thick and non sticky.
  • At one stage the halwa will leave the sides of the pan. (if pan is non-stick mixture is not stick on the pan) at that point add chopped cashews, almonds, pistachios and cardamom powder and mix well.
  • After adding ghee cook around 12-15 minutes.
  • The halwa will look non sticky, it will leave the pan, it will be thick and glossy, and the ghee will ooze from the sides of the pan.
  • At this oint pour this into a square pan and set it in fridge for 1 to 2 hours.
Once it is set, invert it to a cutting board and cut it into slices. And serve.

Masala French Fries

Ingredients
  • 3-4 long size potato
  • oil for deep-frying
  • 1 tsp chat masala
  • ½ tsp powdered sugar
  • 1/2 tsp chilli powder
  • 1/2 tsp roasted cumin seeds (jeera) powder
  • 1/4 tsp black salt (sanchal)
  • salt to taste
Method (How to make crispy masala french fries at home)
  • Peel and cut potato lengthwise as finger chips and put on the water for 5-10 mins. Wash in running water and keep aside.
  • Boil water in a deep bowl when water start boiling add salt and potato finger and boil till water start boiling again.
  • Switch off the flame and keep it for 5 minutes. Drain and keep inside the fridge for 30 minutes.
  • Heat oil in a deep kadhai, add the potato fingers and deep-fry till they turn light golden in colour from all the sides.
  • Drain on an absorbent paper, fry all potato finger.
  • Heat oil again and put fried finger on hot oil till crisp and golden colour.
  • Drain on an absorbent paper, sprinkle the chilli powder, cumin seeds powder, chat masala, black salt and salt over it and toss gently.
  • Serve immediately with tomato sauce.

French Fries

French Fries
Ingredients 
  • 3-4 long size potato
  • oil for deep-frying
  • salt to taste

  • Peel and cut potato lengthwise as finger chips and put on the water for 5-10 mintes. Wash in running water and keep aside.
  • Boil water in a deep bowl when water start boiling add salt and potato finger and boil till water start boiling again.
  • Switch off the flame and keep it for 5 minutes. Drain and keep inside the fridge for 30 minutes.
  • Heat oil in a deep kadhai, add the potato fingers and deep-fry till they turn light golden in colour from all the sides.
  • Drain on an absorbent paper, fry all potato finger.
  • Heat oil again and put fried potato finger on hot oil in high flame till crispy and golden colour.
  • Drain on an absorbent paper, sprinkle salt over it and toss gently.
  • Serve immediately with tomato sauce.

Vegetable Potato Cheese Nuggets

Ingredients(for 3-4 servings)
  • 3 medium size Boiled  potatoes
  • 1/2 cup carrot fine shredded
  • 1/3 cup Cabbage fine shredded
  • ½ cup crushed sweet corn
  • 1 medium size Onion fine chopped
  • amul cheese cubes
  • 1-2 green chillies (finely chopped)(optional)
  • ¼ tsp red chilli powder
  • ¼ tsp pepper powder
  • 1 tsp lemon juice
  • Salt as per taste
  • ¼ cumin powder  
  •  Tomato ketchup for serving
  • Oil for frying  
  • 1 tbsp coriander leaves chopped
  • 1 cup fresh bread crumps
Method (how to make vegetable potato cheese balls)
  • Boil the potatoes and mash it. Chopped all vegetables very fine and keep it aside.
  • Heat 2 tsp oil in a kadhai or deep pan,  add onion saute till slightly golden color.
  • Add  fine chopped vegetables and saute until vegetables gets tender and water evaporate at medium to high heat. Add  chili powder, cumin powder and pepper powder. Saute wel, turn off the heat. Keep it aside for cool down.
  • Add boiled and mashed potato, coriander leaves and 1/4 cup bread crumbs in to it and mix very well. Add salt to your taste.
  • Make small pieces for cheese.
  • Make a lemon size round balls from the mixture, and stuff a piece of Mozzarella cheese cube in the  center. Make all veg ball following the same process.
  • Roll the balls in to bread crumbs and keep it aside.
  • Heat oil in a dip frying pan at high heat. Once it hot enough bring the temperature at medium heat. Add the veggie ball in to hot oil. Fry till golden color.
  • Remove the veggie balls from the oil and place it on kitchen towel for absorbing excess oil.
  • Veggie cheese balls are ready to be served.
  • Serve with tomato ketchup as a snacks for your kids or serve as a party starter for your party.

Eggless Tutti Fruiti Cookies

Ingredients
  • 1 cup refined flour or wheat flour (or half maida and half aata)
  • ½ cup powdered sugar
  • 70 gram (6 tbsp) unsalted butter (at room temperature)
  • A pinch of salt
  • ½ tsp rose essence
  • ½ cup tutti fruiti
  • 2 tbsp milk
Method (how to make  aata cookies with tutti fruiti)
  • Take butter in a deep bowl and whisk nicely, add powdered sugar and mix with hand mixer till fluffy and light. It will take around 5-7 minutes.
  • Now add  rose essence or  you can add any fruit extract or essence and salt.
  • Mix well extract with the creamed mixture.
  • Add 1 cup shited whole wheat flour or refined flour or can be half half.
  • Now add milk and tutti fruit gently mix with your hands and gather the whole mixture in a dough. Now roll the dough gently having a width of 0.5 cm at the edges.
  • Cut with a cookie cutter, cut the cookie slices, roll agains with remining dough and cut with the cutter.
  • Greased a baking tray and place cookies on greased baking tray.
  • Preheat oven at 160 degrees C. and bake cookies for 15-20 mins till the tops become light golden. Since. Switch off the oven.
  • After few  minute, place the cookies on a wired rack. Let them cool at room temperature. once cooled, store them in an air-tight box or jars.
  • Serve these cookies as a tea time snack.

Instant Poha Idli

Instant Poha Idli

Ingredients
  • 1.5 cup  Idli Rava (Rice Rawa)
  • 1 cup poha (Thin variety )
  • 1 cup sour curd
  • ½ tsp eno fruit salt
  • Water as required
  • Salt to taste

Method (How to make instant poha idli)

  • Wash the poha and  soak poha in curd for 3-4 mins . when it  become mushy, Mash nicely.
  • Add idli rava ,   and salt  to it . Mix and allow to sit for 10 mins.
  • Mixture will  drink in all the liquid content. Add water as required and get idli batter consistency. Idli batter is ready , fermentation not required.
  • Heat water in a steamer. Grease idli molds with oil.
  • Add eno fruit salt and mix well, Pour the batter into idli stand.
  • Steam for 12-15 mins on medium flame.  Prick a tooth pick, if it comes clean it means its done. Allow it to cool a bit and remove from molds using a spoon or knife.
  • Soft, spongy and instant poha Idli's are ready to serve.
  • Serve with coconut chutney or with  Sambhar.

Smiley fry

Ingredients (for 2-3 serving)
  • 2-3 medium size potato (boiled and nicely mashed)
  • 2-3 tbsp Corn flour
  • 1/4 tsp Pepper powder
  • Salt to taste
  • 1 tbsp bread crumbs
  •  Oil for deep frying
Method (How to make smiley at home)
  • In a large bowl take the boiled and mashed potatoes, add corn flour, bread crumbs, pepper powder salt.
  • Mix them well and knead with hand to form a dough.
  • If the dough is too loose add extra corn flour.
  • The dough should be smooth and soft.
  • Make small lemon size balls with the dough and flatten them.
  • Now take a straw to cut the eyes for the smiley.
  • Use a spoons edge to make a smile on the smiley. Do the same procedure to make  all the smiley circles.
  • Heat the oil in a kadai and when the oil is hot simmer the flame.
  • Slide in 2-3 smiley at a time and fry them till golden brown on medium flame.
  • Take them out from the oil and serve hot with tomato sauce.
