Daliya Khichdi or Broken Wheat Khichdi



Daliya Khichdi or  Broken Wheat Khichdi
Ingredients (for 2-3 servings)
1 cup Daliya ( Broken Wheat ) roasted
½ cup yellow moong dal
1 cup chopped vegetables (capsicup, beans, cauliflower, peas, carrot)
1-2 green chilli Finally chopped
1 large onion finally chopped
2 1/5 cups Water  
Oil or Ghee– 1 tbsp
1 pinch asafoetida
1 tsp  Cumin seeds (jeera)
Salt to taste
2 tsp Lemon juice
1 tbls  chopped corainder leaves

Method (How to make daliya khichadi)
Wash and soak moong dal for 10 min.
Heat ghee in a pan and add cumin seeds when start crackle, add the chopped onions, heeng and fry till onion turn light brown. Add the chopped vegetables and mix well and keep stirring for 3-4 min on medium heat.
Add washed moong dal to it. Mix it well.
Now add roasted daliya, 2 1/5 cup water, and salt, cover with lid and cook for 10-12 mintues at low heat. Remove from the heat add lemon juice and garnish with coriander leaves and serve hot.

Kathal Do Pyaza – Jackfruit Curry



Kathal Do Pyaza Jackfruit Curry
Ingredients (for 3-4servings)
300 gm Small Kathal (Jackfruit) peeled and cubed
3-4 large Onion sliced
2” peice Ginger grated
10-12 garlic cloves grated
2-3 whole dry red chillies
3-4 Bayleaf (tejpatta)
2 Black cardamom
2 Green cardamom
5-6 cloves
1” long cinnamon stick
2 tsp whole black peppercorns
1 tsp cumin seeds
1 tsp coriander powder
Mustard oil or refind oil  2 tbsp
salt as per taste                                                                             

Method (How to make kathal do pyaza)
Crushed all whole spices cardamom, green cardamom, cinnamon, cloves, pepper and cumin and keep aside.
Now heat oil in heavy bottom wok and add crushed spices, beyleafs, whole red chilli and saute few seconds. 
Add sliced onion and saute few seconds and ginger and galic now add jacfruit and saute continusly for 2-3 minuts add salt, coriander powder and mix well, Close the lid and cook on low flame for 3-4 minuts.
Now add halt cup of water and cook till jackfruit done properlys
Serve hot with chapati of paratha.

Thekua



Thekua
Ingredients
2 cup Whole Wheat Flour
1/2 cup Semolina ( Sooji / Rava)
1 cup Sugar
1/2 cup grated Jaggery
1/2 tsp green cardamom powder
1 tsp fennel powder (saunf)
1/2 cup grated or powdered Coconut
4 tbsp Ghee (for moyan)
Refind oil for frying

Method
Mix all ingredients in a large bowl and knead stiff doung.  Make small round balls and flatten them in your palm to make cookie shape.
Now heat oil in wok and deep fry them on medium flame till brown in colour.
When cool down, store in airtight container.

Kurkuri Bhindi – Crispy Okra



Kurkuri Bhindi Crispy Okra 

Ingredients (for 2-3 servings)

250 gms bhindi (small size)

2-3 tbls besan (gram flour)

1/2 tsp red chilly powder

1/2 tsp garam masala

1/4 turmaric powder

1/4 tsp amchur powder

salt to taste

1 tbls oil

Method (How to make kurkuri bhindi)


Wash and dry the bhindi and then cut them lengthwise thin pieces.

Now heat oil in a non stick pan add bhindi and fry few minuts, close the lid of the pan and cook few minuts or till they become litle soft.

Now mix besan with red chilly powder, turmeric, amchur, salt and garam masala.

Now sprinkle this mixture over the bhindi evenly so that all the pieces are covered.

Now fry the coated bhindi till they are crisp and brown.

Serve Hot with parathas.
